Salted garlic cloves are a specially processed garlic product. The production process includes multiple steps such as seed selection, clove separation, soaking, peeling, grading, blanching, cooling, pickling, sorting, soup preparation, and barreling. First, select mature, dry, and clean garlic. After clove separation, soaking, and peeling, the garlic cloves are graded according to their size.
Then, the garlic cloves are blanched in a blanching solution at a specific temperature and immediately cooled with clean water. During the pickling process, the garlic cloves will be pickled in brine of different concentrations several times to ensure the flavor and shelf life of the garlic cloves. Finally, after sorting and soup preparation, the garlic cloves are put into barrels, injected with the prepared soup, and sealed to obtain the finished product. The finished salted garlic cloves should be white or milky white, shiny, with transparent brine. A small amount of garlic meat debris that does not cause turbidity is allowed, and the garlic cloves should be crisp, tender, "bitty", without odor, and complete grains.
