1. Raw material processing, select fresh, smooth and thick horseradish as raw materials, soak and wash in running water to remove dirt.

2. Cutting, send the horseradish into the cutting machine for cutting (it can also be operated manually with a kitchen knife). The specifications of the cutting strips can be mastered by yourself. The blade of the cutting strips should be sharp to prevent the strips from being connected.

3. Blanching, put the horseradish strips into boiling water and blanch for 2-3 minutes, take out and drain the water, which can keep the raw material bright in color. The tissue is soft and prevent browning.

4. Drying, spread the horseradish strips on a baking tray, place them in layers on a tray rack, and dry them at 60-70℃ for 4-5 hours. When the moisture content of the dry crystal is less than 5%, move it indoors to cool. In order to reduce processing costs, the silica gel drying method can also be used. That is, the desiccant silica gel and green pepper strips are placed in layers in a large porcelain jar, one layer of silica gel and one layer of green pepper, filling the jar, and sealing it with a cover. Since no heating equipment is required to consume electricity, this method can greatly reduce processing costs. This method takes about 4 days to process and can make its moisture content less than 5%.

5. Packaging. After the dried products are sorted and the defective products are removed, they are packaged in double-layer plastic bags with a film thickness of less than 0.08 mm. Note that the storage temperature should be lower than 15°C, and it is easy to oxidize and deteriorate at high temperatures.
